My go-to cookie recipe uses just 7-ingredients and could not be any easier to make. This is a gluten-free chocolate chunk cookie that is truly the only cookie recipe you will ever need. Be sure to use all-natural creamy almond butter as the base and if you want a lower sugar option you can swap the turbinado sugar with monk fruit. #shorts

MY GO-TO COOKIE RECIPE
1 cup unsalted almond butter
3/4 cup turbinado sugar OR monk fruit (for lower sugar option)
1 egg
1 tsp. vanilla extract
1 tsp. baking soda
1 tsp. kosher salt
3 ounces dark chocolate, chopped
INSTRUCTIONS
Preheat oven to 350.
Combine almond butter, sugar, egg, vanilla, baking soda, and salt in a large bowl and hand mix until everything is incorporated.
Gently stir in chopped chocolate.
Drop the cookie dough into 1-tbsp plops on a rimmed baking sheet lined with either Silpat mat or parchment paper.
Bake for 10 minutes. Cool completely and store in an airtight container. Enjoy!
Makes 18-22 cookies.
