Oyster mushrooms are considered very delicate so it is really important that when you're picking oyster mushrooms they're still firm. They're not slick or moist in any way. They should have a really nice, velvety texture to it. Kind of a mild flavored mushroom, it lends itself very well to chicken and fish. You will find these in plastic at the grocery store and it will actually decrease the shelf life from four days to about zero. So what you want to do is take them out of the plastic and you want to put it into a paper bag and that's going to ensure that you're going to get the shelf life that you're looking for.
