Hi Friends, wanted to share this really easy and delicious pasta all norma with you thats a family favorite and been making it for years!! There are many variations of it but as long as it has tomatoes, eggplant and some kind gf cheese, you're golden! It's really so delicious I know you will love it!
RECIPE:
1 Medium firm Eggplant
Light Olive Oil (or veg oil) or frying
Extra Virgin Olive Oil
14.5oz can of Cheery Tomatoes plus about 1/2 cup of water
Ricotta Salata
Parm to taste
Fresh Basil
Salt to taste
8oz of Penne
RECIPE:
