Protein Bites
1 cup Medjool dates, pitted
½ cup almond butter
½ cup rolled oats
½ cup almonds, finely chopped
¼ cup pepitas
¼ cup sunflower seeds
Tropical Fruit
¼ cup dried pineapple, finely diced
¼ cup dried mango, finely diced
¼ cup dried papaya, finely diced
2 tbsp shredded coconut
Very Berry
¼ cup dried strawberry, finely diced
¼ cup dried cherries
¼ cup dried wild blueberries
Chocolate Peanut Butter Pretzel
¼ cup chocolate chips
¼ cup peanut butter chips
¼ cup pretzels, crushed
In a food processor, pulse dates until they create a paste.
Add almond butter and rolled oats. Pulse until combined.
For smoother energy bites, add almonds, pepitas and sunflower seeds to the food processor.
For chunkier energy bites, pour date mixture into a large bowl and add almonds, pepitas and sunflower seeds.
Add flavor and mix well with your hands.
Roll into 1” bites.
Store in the refrigerator for 7 days or in the freezer for a month.
