Biscoff cookies have stolen my heart! These buttery sweet biscuits have a hint of caramel, brown sugar, and cinnamon; the perfect combination for Thanksgiving. I’m definitely known for my elaborate Thanksgiving menus and buffets (though my tablescapes could always use some help), and these salted maple Biscoff squares will definitely be served at the dessert bar this year!


Salted Maple Biscoff Squares
Biscoff Crust
1 package Biscoff cookies (about 30 cookies)
1 cup all-purpose flour
½ cup sugar
½ cup unsalted butter, melted
½ tsp kosher salt

Salted Maple Filling
½ cup pure maple syrup
¼ cup light brown sugar
2 Tbsp all-purpose flour
2 large eggs
1 tsp vanilla extract
2 Tbsp coconut milk or heavy cream
½ tsp kosher salt

Toppings
Biscoff cookie butter
Sea salt

-Preheat the oven to 350°F (180°C) and line a small rectangular or square baking dish with parchment paper.
-Make the Biscoff crust: Crush the cookies in a bag or food processor, then transfer to a medium bowl and add the flour, sugar, melted butter, and salt. Mix together, then press two-thirds of the mixture into the bottom of the prepared baking dish.
-Make the salted maple filling: In a stand mixer fitted with the paddle attachment or by hand, beat together the maple syrup, brown sugar, and flour until the flour is incorporated into the batter. Add the eggs, vanilla, coconut milk, and salt and mix until well combined.
-Pour the filling over the crust, then crumble the remaining dough on top.
-Bake for 30-40 minutes, until fully baked through. Remove from the oven and let cool completely.
-Melt the cookie butter in the microwave for 30 seconds, then drizzle over the cooled squares. Sprinkle it with sea salt.
-Cut into individual squares and serve.
