Skillet Sharing Cookie | Gooey, chocolatey and best of all it keeps the kids quiet.. for at least 10 minutes! ???? This is one you defo need to try this weekend x
Serves: 6-8
Prep Time: 15 minutes, plus 1 hour chilling
Cooking Time:25 minutes
200g butter, softened
200g light brown soft sugar
100g golden caster sugar
1 egg (large)
1 tsp vanilla extract
325g plain flour
½ tsp bicarbonate of soda
1 tsp baking powder
100 g white chocolate
100 g dark chocolate
Sprinkle of sea salt
Vanilla ice cream
Preheat the oven 180°C/350°F/Gas Mark 4.
Chop the white chocolate and dark chocolate into rough chunks and set aside.
Using a freestanding mixer or a handheld electric whisk, beat together the room-temperature butter, light brown soft sugar and golden caster sugar together for 2 minutes, until light and fluffy.
Beat in the egg and vanilla extract. Add in the plain flour, bicarbonate of soda, baking powder and sea salt. Beat on a low speed until just combined.
chocolate chunks through and bring the dough together using your hands or a wooden spoon. Chill for an hour to firm up.
Spoon the cookie dough into a non-stick 25 cm skillet pan and roughly flatten using the back of a spoon and sprinkle with a little sea salt. Bake for 20-25 minutes, until pale golden.
Leave to cool for a few minutes (being cautious of the hot frying pan handle) before serving on the centre of the table with scoops of ice cream in the middle.
