I wanted to share my recipe for how I make one of my favourite meals - a vegan version of the traditional Irish food staple 'Colcannon'.
From the Irish: cál ceannann, meaning "white-headed cabbage" - though there is no white cabbage involved but the white potatoes mixed with the dark green cabbage may explain this meaning!
I include a lovely story from my mum and my interpretation of where this recipe originated.
