Khanom sun is a fun dessert to make to celebrate Pride month! Here is the recipe:
Ingredients
2 cups tapioca flour
½ cup jasmine rice flour
1 cup sugar
1 tsp salt
1 13.5-oz can coconut milk
1 cup water
Food coloring of choice
Neutral oil or nonstick cooking spray
Preparation
1. In a large bowl, combine the tapioca flour, jasmine rice flour, sugar, and salt. Whisk well.
2. Add the coconut milk and water and whisk until well-combined.
3. Divide the batter between 6 small bowls, about ⅓ cup per bowl, leaving any remaining batter in the original bowl. Add your desired food coloring to each small bowl and mix well to achieve the desired shades. Leave the remaining batter in the original mixing bowl white.
4. Fill the bottom of a steamer pot with water. Cover the lid of the steamer with a towel, then place the pan over high heat and bring the water to a boil. Reduce the heat to medium.
5. Grease a loaf pan with neutral oil and use a paper towel to spread evenly.
6. Mix the color of batter you’d like to use for the first layer, then pour into the prepared loaf pan. Cover and steam for 5 minutes, until starting to set. Pour ¼ cup of the white batter over the colored layer, then cover and steam for 5 minutes more. Repeat with the remaining colors, alternating each layer with the white batter and steaming between each addition, until you have 12 layers total. Before adding each layer, make sure to mix the contents of the bowl again.
7. Remove the cake from the steamer and let cool for 1 hour.
8. Once cooled, turn the cake out of the loaf pan and cut into squares.
9. Enjoy!
