If you are really craving bacon but trying to avoid the calories, there's a healthy alternative. Bake some prosciutto. Put the prosciutto on a rack in a rimmed baking pan. Put it in the oven (bake at 350 degrees for twenty minutes) and you can break it up over soup. You can put it on pasta. You can put it in a sandwich. Not only is it less fatty, it gets really crisp and concentrated in flavor and you end up not needing as much.
