Bourbon Buttercream Brownies
Step 1: Make a recipe for brownies of your choice. You may use a mix or make my recipe, which I have listed below:
Blue Ribbon Brownies--50-Year-Old Recipe!
1 stick butter
(2) 1 oz. squares of unsweetened chocolate
1 cup sugar
1 egg, well beaten
2/3 cup self-rising flour
1 teaspoon vanilla extract
1 cup chopped pecans
Melt the stick of butter along with the 2 squares of unsweetened chocolate in a saucepan over low heat, stirring occasionally. Let this mixture cool to room temperature. To the melted mixture add 1 cup of sugar, 1 well beaten egg, 2/3 cup of self-rising flour, 1 teaspoon of vanilla extract, and 1 cup of pecans. Mix all together and pour into an 8 inch by 8 inch baking pan (or dish). Bake at 350 degrees 20 to 25 minutes. Brownies will be done when a toothpick placed in the center comes out clean. Remove cooked brownies from the oven.
Step 2: While brownies are still hot, use a fork to punch holes all over the top of the brownies and brush on 2 to 4 tablespoons of bourbon whisky, depending on how strong you want the bourbon flavor. Let cool.
Step 3: Beat together 1 stick of softened butter, 2 cups of confectioner's sugar, and 2 to 3 tablespoons bourbon whisky. Spread this frosting over the cooled brownies.
Step 4: Sprinkle top with ¼ cup mini semisweet chocolate chips.
Step 5: Cover with plastic wrap and chill in refrigerator.
Step 6: When iced brownies are chilled, cut into 16 equally-sized squares and place them on an appropriate serving plate or cake stand. Garnish with a sprig of mint. These are gorgeous and taste wonderful!
