Betty demonstrates how to make Cheddar Cayenne Biscuits. These are spicy biscuits containing Cheddar cheese and chopped pecans.
Cheddar Cayenne Biscuits
½ cup (1 stick) cold butter, cut into small cubes
2 cups self-rising flour
2 cups finely shredded Cheddar cheese
½ teaspoon cayenne pepper
½ cup chopped pecans
¾ cup plus 2 tablespoons milk
melted butter, for top
coarse salt, for top
In a large bowl, use a pastry blender to cut butter into flour. Also, cut in shredded Cheddar cheese. Stir in cayenne pepper and pecans. Add milk and mix just until a ball forms. Place ball of dough on clean surface that has been sprinkled with flour. Knead a few times and flatten dough slightly. On floured surface, use a rolling pin to roll the dough to ½-inch thickness. Cut with a 2-inch to 2 ¼-inch biscuit cutter. Place biscuits in an ungreased baking pan. Brush each biscuit top with a small amount of butter and sprinkle with a small amount of coarse salt. Bake at 450 degrees for about 10 minutes, or until golden brown. Remove from oven and transfer immediately to a nice serving plate. Enjoy! --Betty :)
