Betty demonstrates how to make Chocolate Cream Cheese Frosting for topping the Rich Chocolate Cupcakes, a recent recipe in Betty’s Kitchen. This frosting is a standard cream cheese frosting with cocoa powder added.
Chocolate Cream Cheese Frosting
4 ounces cream cheese, softened
¼ cup butter, softened
½ teaspoon vanilla extract
8 ounces confectioner’s sugar (This is the same as icing sugar or powdered sugar.)
¼ cup cocoa powder
Place 4 ounces softened cream cheese, ¼ cup softened butter, and ½ teaspoon vanilla in a large mixing bowl and beat with an electric mixer at medium speed until creamy. Add 8 ounces confectioner's sugar and beat at medium speed until smooth and spreadable. At this point, save a small amount of frosting in a small bowl if you plan to add food coloring and decorate the top of your dessert. Spread frosting on cooled cake, cupcakes, or cookies. This frosting will be used on the Rich Chocolate Cupcakes in Betty’s Kitchen. A few of the cupcakes will be decorated for Halloween. I hope you enjoy this frosting and also the cupcakes!
