Betty demonstrates how to make Peanut Brittle Fantasy. This is a delicious dessert made with peanut brittle, marshmallows, and sweetened whipped cream.
Peanut Brittle Fantasy
2 cups peanut brittle (in chunks)
2 cups large marshmallows
1 ½ cups whipping cream
½ teaspoon vanilla extract
½ cup sugar
1 cup peanuts, for garnish
whipped cream and mint sprigs, for additional garnish, if desired
Place the peanut brittle in a food processor and process until it is very fine. Set aside. Cut the marshmallows into quarters. Set aside. In a large bowl, whip cream on medium speed of an electric mixer until soft peaks form. Add sugar and vanilla and whip until stiff peaks form. Fold processed peanut brittle and marshmallows into sweetened whipped cream. Pour into nice serving bowl, cover with plastic wrap, and chill for 2 hours or longer. Serve in sherbet glasses. Top with a dollop of whipped cream, a mint sprig, and a few peanuts. Enjoy! --Betty :) ♥♥♥♥
