Betty's Rectangular Red Velvet Cake -- Valentine's Day ♥

Betty demonstrates how to make a Rectangular Red Velvet Cake. This is an easy way to make an elegant and romantic dessert. The next video in Betty's Kitchen will be a Vanilla-Cream Cheese Frosting for this (or any other) flat cake.
Ingredients:
1 cup butter, softened
2 ½ cups sugar
4 eggs
red gel paste food coloring, as desired (or at least a 1-ounce bottle of red food coloring)
1 tablespoon vanilla extract
3 2/3 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
¾ teaspoon salt
2 cups buttermilk
cooking oil spray
Use an electric mixer on medium speed to beat butter until light. Gradually add sugar and beat with the butter until mixture is light and fluffy. Add eggs, one at a time, beating well after each addition. Add red gel paste food coloring (or at least a 1-ounce bottle of red food coloring) until desired color is achieved. Add vanilla extract and beat until smooth. In a large bowl, stir together all-purpose flour, unsweetened cocoa powder, baking powder, baking soda, and salt. Add flour mixture to butter mixture, alternately with buttermilk, beginning and ending with the flour mixture. Beat at low speed after each addition, just until blended. Pour batter into 11-inch by 15-inch by 2-inch baking dish that has been sprayed with cooking oil spray. Bake at 350 degrees (F) in the center of the oven for about 35 minutes, checking occasionally to see if a toothpick inserted in the deepest part comes out clean. Remove from oven and place on cooling rack to cool just enough to pour a glaze over the top. (A Vanilla-Cream Cheese Frosting will be the next video in Betty's Kitchen, and it makes a perfect glaze for a Red Velvet Cake.) This is a great cake to make for your special someone.
