Betty demonstrates how to make Strawberry-Coconut Trifle Delight. This is a recipe for individually-served trifles, consisting of coconut cookies, strawberries, and flavored whipped cream.
Ingredients (for 4 to 6 servings):
1 cup whipping cream, whipped
½ teaspoon sugar
½ teaspoon vanilla extract
a very few drops of red food coloring
¾ pound coconut macaroons or other coconut cookie, broken into bite-size pieces
10 ounce package frozen strawberries, thawed 1 hour before using and cut into halves
Add sugar and vanilla to whipped cream. Reserve a few spoonfuls of whipped cream mixture to use later for garnish. Stir a drop or two of red food coloring into remaining whipped cream mixture, until a soft pink color is obtained. Layer coconut cookie bites, strawberries, and pink whipped cream mixture in a dessert glass, repeating layers up to the top. Place a dollop of reserved white whipped cream mixture on top and complete garnish by adding a whole strawberry. Serve immediately or refrigerate for a half-hour to soften coconut cookies.
