BURNING All Your Love Letters Cocktail

Sooooo if you were single this Valentine’s Day, OR you are newly as single as Pringle, this one’s for you. ????

I’m Burning All Your Love Letters (A Flaming Blackberry, Thyme, and Espresso Cocktail)

1 ½ oz golden or aged rum
½ oz espresso
1 oz fresh lemon juice
1oz blackberry thyme syrup
Barspoon 151 rum for dramatic finish (If uncomfortable, you can torch a sprig of thyme)

Combine rum, espresso, lemon juice, and syrup in a drink shaker filled with ice. Shake until well chilled, and strain into coupe glass. Using a barspoon, carefully float 151 rum on top of cocktail and light. Douse flame with a saucer before serving. If you are not comfortable with this, you can also garnish with a sprig of torched thyme.

Blackberry Thyme Simple Syrup

½ cup granulated sugar
¼ cup water
¾ cup blackberries (fresh or frozen)
3 sprigs fresh thyme.

Combine all ingredients in a saucepan and bring to a boil. Once boiling, reduce to a simmer, and cook until blackberries are completely softened and broken down, stirring occasionally. Strain mixture through a mesh strainer in to a mason jar and let cool.
