** WINTER SPECIAL**
Today I bring to you an Authentic Tibetan Style Chicken Thukpa. This is an Authentic Style Thukpa which I have grown up eating with my family :)
Over the Years Thukpa has been replaced and revived with lot of innovation. But this is an Original and Authentic Style.
Ingredients :
For the Thukpa Soup
• 1 litre jar of water
• 500 gms of Fresh Chicken
• 1 Big Size Onion Diced.
• Few Garlic Cloves
• 1 big size whole garlic
• 1 tbsp Salt.
• ½ tbsp Ajinomoto (MSG)
• Little bit of chopped spring onion.
Shredded Chicken
• 1 tbsp Oil.
• 1 Tbsp Chopped Onion and 1 slice Green Chilli.
• ½ tbsp Salt
• ½ tbsp Chilli Flakes
• ¼ tbsp Soya Sauce
• Little bit of Chopped Coriander Leaves.
Noodles
• 1 litre of water
• 1 tbsp Salt
• Noodles of your Choice (400 gms)
• 1 tbsp oil.
Method:
1) For the Thukpa Soup
Use a Heavy bottom pan/Pot preferably.
Pour 1 litre jar of water in a Pan/Pot and bring it to a boil.
Add in 500 gms of Fresh Chicken
** Do not Add Frozen Chicken
Add in 1 Big Size Onion Diced.
Add Few Garlic Gloves
Add 1 big size whole garlic
Cover the lid and cook on medium for 45-1 hour.
Chicken should be properly cooked but not overcooked.
After 1 hour
Open the Lid.
Carefully remove the Chicken with tongs.
Also remove all the onion and garlic.
Add 1 tbsp Salt.
½ tbsp Ajinamoto
Little bit of chopped spring onion.
Cover the lid and bring it to a boil.
Clear Soup for Thukpa is ready :)
2) Shredded Chicken for Thukpa
1. Take the Boil Chicken and start separating the meat from bone.
Repeat the same for all the three pieces.
Shredded Chicken for Thukpa is Ready.
2. Alternatively I like to lightly Pan Fry my shredded chicken.
Heat a Pan. Pour 1 tbsp Oil.
1 Tbsp Chopped Onion and 1 slice Green Chilli.
On High Flame quickly add the shredded Chicken.
½ tbsp Salt
Saute on High Flame.
½ tbsp Chilli Flakes
¼ tbsp Soya Sauce
Little bit of Coriander.
Saute on High Flame for about 3-4 Minutes and you are done :)
3) Noodles for Thukpa
Add about 1 litre of water
Add 1 tbsp Salt
Mix well
Bring it to a boil
Add in Noodles of your Choice (400 gms)
I used Egg Noodles in this video.
Cook until the Noodles are soft but not soggy.
**Do not add Oil at this Stage. Adding Oil is a waste because the Oil just floats on top.
Strain the Cooked Noodles and pat dry the noodles.
Now add 1 tbsp oil.
Again pat dry to ensure no water is left.
With a chopstick ensure the Oil is evenly spread to all the noodles. This will prevent the noodles from sticking to each other.
Time to Plate our Thukpa !!
Add the dried Noodles.
Add in Hot Soup
Add Pan Fried Shredded Chicken.
Add Chopped Spring Onion and Coriander leaves
Add Chilli dipped in Vinegar.
Add 1 spoon of Soya Sauce.
Voila time to dig in our Hot Steaming Chicken Thukpa.
