So I had to eat it all myself... Bittersweet.....
Tiramisu Recipe:
1 x 250g packet white biscuits (cookies! We call them biscuits in Oz)
¾ cup (180ml) hot espresso coffee
¼ cup (60ml) Tia Maria coffee liqueur
2 tbsp caster sugar
300ml thickened cream
250g mascarpone
1 tbsp cocoa powder

Step 1
Place the sugar into the espresso and Tia Maria. Stir to dissolve and set aside.
Step 2
Add the cream into a small bowl and beat with an electric mixer until it JUST starts to thicken up.
Step 3
Gently fold the mascarpone into the cream until combined and smooth.
Step 4
Add a splash of colour by splitting the creamy mixture evenly into 3 bowls. Add a few drops of food colouring to each bowl to tint in your desired shades.
Step 5
Soak cookies in the coffee mixture for 30 seconds or until they start to soften. Cover the base of a shallow 20cm square dish with the softened biscuits. If necessary, halve the biscuits to fit the dish.
Step 6
Dust the cookies with cocoa, then top with one colour of the cream mixture. Repeat this process with remaining biscuits and cream, finishing with a layer of cream. Dust the top with cocoa.
Step 7
Say ‘Tira-Miss-You’ by smoothing the top of the tiramisu with a spatula and chill for 30 minutes. Print out your desired wording on heavy duty paper to create a DIY template and cut out the letters. Place the template over the tiramisu and gently sift cocoa over the top. Reveal your delicious message by lifting the template upwards so as not to spill the cocoa.
Step 8
Refrigerate 3hrs (or overnight). Slice into squares with a sharp knife and serve.
