These eggless pumpkin cookies are my new favorite—made with fresh or canned pumpkin puree and drizzled with an easy powdered sugar icing. They’re seriously so soft & chewy, you’d never guess they’re egg-free!

The same goes for my eggless pumpkin bread recipe: it’s fluffy, spongy, & moist, even with NO eggs in the recipe. Sprinkle pumpkin seeds on top before baking for a gorgeous loaf with some fun crunch!
