Learn how to make the center of a magnolia sugar paste flower from cake designer Amy Noelle in this Howcast cake decorating tutorial, part 1 of a 3-part series.


Making sugar magnolias is easier than you think. It consists of making the
center and then eight petals all the way around. Let me show you how to
create the center. The center starts the four gram piece of gum paste that
I've rolled into a ball. I'm going to insert a wire into the middle. I've
already hooked the wire, and I want to make sure that I'm using a sturdy
wire.

This is an 18 gauge wire so it's pretty thick. I'm going to dip the hooked
end of my wire into a little bit of edible glue, brush off the extra.
Inserting it into my ball of gum paste, I'm going to close up the hole and
pinch the top so it becomes like a teardrop shape.

Now if you look at the center, it has all of these little ridges. I achieve
that by using a small pair of scissors. With my scissors, I'm working from
the bottom going towards the top. I'm just going to pinch and cut little
tiny pieces all the way around the circle. Once I get all the way around,
to me the shape kind of looks like a strawberry if I were to stop here, but
I want to keep going.

So in between each of those cuts, I'm going to cut again and work all the
way around the center so that I have lots and lots of little pieces. Now I
keep going all the way to the tip and just add one or two more little
snips. Then my center needs to dry overnight for 24 hours before I'm ready
to attach the petals to it.
