GOLDEN TURMERIC CHAI LATTE
Serves 2 Prep 5 mins Cooking 5 mins
1 tsp ground turmeric
1/2 tsp ground ginger
1/2 tsp ground cardamom
¼ tsp ground nutmeg
1 cinnamon stick
1 whole star anise
1 tsp fennel seeds, crushed
1 tsp vanilla bean paste
Coarsely ground black pepper
2 cups (500ml) milk (or soya, almond)
Hney or coconut sugar, to taste
1. Combine the turmeric, ginger, cardamom, cinnamon, nutmeg, star anise, pepper, fennel and vanilla in a medium saucepan. Add the milk and stir to combine. Place over medium heat. Bring to a simmer. Set aside for 5 mins for the flavours to infuse.
2. Strain through a fine sieve into serving glasses. Taste and season with honey or sugar. Serve immediately.
