This is a really cool way to have a bit more of a jazzed up, sexier type of tuna. Get tuna that is sushi grade. This one's fantastic; it's Bigeye. You can also get Yellowfin. Avoid the Bluefin because it's basically over fished. Put it onto a little tray. Then you have your hot boiling water and you just literally pour it over top, just till you see it color it nicely, and it takes about ten seconds, max, to have it done. So afterwards, while it's still hot, I put it into a little broth made out of dashi. Let it sit for an hour or two. It marinates it beautifully and what you're left with is an absolutely beautiful cooked piece on the outside, beautiful, raw on the inside, and a great flavor marinated through.
