If you've used the green part of a green onion for a recipe and you're not really sure what you're going to do with the bottom. One thing you can do is just resprout it. Take the white part, put it in some water for a couple of days and you'll notice there'll be a little bit of new root growth. Once you see that, just plant it in a pot with some soil. Keep it lightly watered and put it in a sunny spot, and in about a week or two you'll end up with these nice little sprouts and you can use them like chives.
