Roasting beets is a great way to bring out their natural sweetness. Always look for fresh tops that are nice and green to make sure that they are high in sugar. Clean them by washing them and then taking a little bit of this stem and the tops off. Dress them with a little bit of vinegar and a little bit of extra-virgin olive oil. The way we like to roast beets is in a foil packet. Take on sheet of foil, fold it over itself. You want to make sure that it's a very tight seal. That makes sure that none of the steam escapes and that the beats stay nice and moist. After this it's on a tray, into the oven at 350 degrees for about forty minutes. I usually ware gloves. Keep your hands from being red for few hours and then use a kitchen towel or a paper towel and you can literally rub the skin right off the beat.
