Today, we are making the dairy-free version of Joojeh Kebabs.
Joojeh Kabab (also spelled Jujeh Kabab) is one of the most popular and beloved Persian dishes, consisting of succulent, grilled chunks of chicken.
The Chicken: It is typically made with pieces of chicken, often cut into cubes, which are then threaded onto skewers (kabobs). Traditionally, it was made with bone-in young chicken (poussin), but boneless chicken breast or thigh meat is now common.
The Marinade: The distinct flavor and tenderness come from a rich, aromatic marinade. Key ingredients usually include:
Yogurt: Often Greek or plain yogurt, which also acts as a tenderizer and helps the other flavors adhere to the meat.
Saffron: This is the most crucial spice, imparting a delicate, floral flavor and the dish's signature vibrant yellow or golden color. It's usually "bloomed" in hot or ice water before being added.
Lemon Juice or Lime Juice: The acid tenderizes the meat and adds a necessary tang.
Onion: Sliced or grated onion is essential, as the enzymes help tenderize the chicken and add flavor.
Other Ingredients: Salt, black pepper, and sometimes olive oil, garlic, or a touch of turmeric (to boost the golden color) are also included.
Cooking: The marinated chicken is traditionally skewered and cooked over a charcoal grill for a smoky flavor. However, it can also be prepared on a stovetop grill pan or in an oven broiler.
Serving: Joojeh Kabab is frequently served with Chelow (Persian steamed basmati rice), often topped with saffron rice for color. It's also commonly accompanied by grilled tomatoes, a sprinkle of sumac (a tart, lemony spice), and sometimes fresh herbs or a yogurt dip like Mast-o Khiar (yogurt and cucumber). It can also be wrapped in a flatbread like lavash or pita.

Here we replace the traditional Yoghurt with the perfect dairy-free substitute, Kara Coconut cream, combined with lemon, creates a similar flavour, and it also acts as a tenderizer. These kebabs are very popular for the outdoor BBQ, but they can easily be made on the stove-top as seen in the video.
