Hello everyone! I hope you all are well. As promised, I am sharing with you a tutorial on how to make Khoresht Hulu (Persian Peach Stew). I hope you try it and find it easy to follow!
* You can substitute 1/2-1 lb. beef or lamb for the chicken. (I don't eat a lot of red meat, so most of my Persian dishes will be with chicken.) If you are cooking with beef or lamb, add an additional 1 cup of water. The red meat will need to cook a little longer in order for it to become tender. (About 30-45 minutes longer.) Make sure to adjust your seasoning.
* If you are vegetarian, you can omit the meat altogether. However, I will suggest adding 1-2 extra peaches. Yummy!! :-)
* You can substitute lime juice for the lemon juice. (I recommend fresh).
* If you are cooking with 2 peaches, I suggest only using 2 tablespoons oil. I had too much oil, so I cooked an additional peach.
*Please taste to adjust your seasonings. If you prefer a sweeter khoresht add more brown sugar. If you prefer a more tart khoresht add more lemon or lime juice.
*In the final 20-30 minutes of cooking with the peaches, please keep an eye on khoresht. You do not want it to reduce too much...if this happens it will dry out and burn.
