For those times when you crave Risotto — in ball form.
INGREDIENTS:
2 cups prepared spinach risotto
Water
1 ball mozzarella, diced
1 jar horseradish
2 eggs, beaten
1 cup breadcrumbs, such as panko
Matcha powder, for dusting
Flaky sea salt, for garnish
STEPS:
1.) Heat oil until it reads 350° on a fry thermometer.
2.) Take a small handful of spinach risotto and roll it into a small ball, using water to help the rice stick together if needed.
3.) Put a piece of mozzarella and 1/4 teaspoon of horseradish on the top, and press it into the center of the ball. Roll to reform the ball.
4.) Dip the ball in the eggs, and then in the breadcrumbs. Fry for 2 minutes, keeping in mind to not overcrowd the pot to help keep temperature consistent.
5.) Sift matcha over the top to finish. Garnish with sea salt. Enjoy!
