I hijacked Jamie Oliver's London Kitchens to team up with FoodTube & Cupcake Jemma to bring you guys 2 awesome thanksgiving videos. AND this was my very first time eating sweet pumpkin!

Pumpkin Pie Cheesecakes:
2 (8 ounce) packages full fat cream cheese, softened
1/2 cup white sugar
1/2 teaspoon vanilla extract
2 x-large eggs
1 cup pumpkin puree
1/2 teaspoon ground cinnamon
1 pinch ground cloves
1 pinch ground nutmeg
1 cup double cream, whipped
2 packets crushed white cookies – any brand / type is fine but if there’s one here that is typically used for pie crusts that would be perfect
50g melted butter
Method:
Preheat oven to 325 degrees F (165 degrees C).
Combine crushed cookies and melted butter and stir well.
Place 1 tbsp of cookie mixture into the bottom of 12 silver foil cupcake cases and press down firmly. Refrigerate to set
In a large bowl, combine cream cheese, sugar and vanilla. Beat until smooth. Blend in eggs one at a time. Spread 1 tbsp of batter into the bottom of each cupcake case and flatten with the back of the spoon
Add pumpkin, cinnamon, cloves and nutmeg to the remaining batter and stir gently until well blended. Carefully divide amongst the cupcake cases, keeping ½ cup spare
Bake in preheated oven for 15 – 20 minutes, or until center is almost set. Allow to cool, then refrigerate for 3 hours or overnight.
Combine remaining batter with ½ of the whipped cream mixture to create a ‘pumpkin cream’ and decorate
