King Trumpets are one of our favorite mushrooms because it's firm and it's dense, similar to almost like abalone meat in texture. It should have a nice, thick, large stem on it and the cap shouldn't have any blemishes. It's buttery sweet and you can go as simple as sauteing it with a little olive oil and garlic or as complex as a stew or risotto and it's going to work out really well.
