Cleaning mushroom is really about separating the dirt and separating the stem. Mushrooms are grown in a couple of different kinds of ways. A lot of them are grown indoors and they see very little dirt. You can see from here that that's a farmed mushroom because that's where it grows out of the pot. Some other mushrooms, if they're wild, like this black trumpet, can typically have a lot of sand and dirt in them so they need to be washed very well. A lot of people are scared to wash mushrooms because they think you're going to wash away the flavor. All the flavor of the mushroom is in the actual mushroom itself, it's not something you can wash off of it. What you don't want to do is leave them in the water too long. They become like sponges. It's safe to spin mushroom but if you spin them too hard it'll break them up. So sometimes it's better just to spin them lightly and lay them out on a towel.
