I'm going to show you how to clean soft-shell crabs. If you're going to go through the trouble of making soft-shell crabs buy them live. You want them to be as fresh as possible. So there are three things you have to do. This is what's called the apron. You want to rip that off. These feathers are the lungs. We have to rip them out. And finally take a pair of scissors and just cut the face off. This is a little brutal but this is the trouble we have to go through to get something this great. And the best thing that you can do would be to do it right and do it quickly, cook it, and really try to enjoy it.
