Some people are usually intimidated about cleaning and cooking squid but it's cheap, it's abundant, it's sustainable. After the nuclear apocalypse there'll be nothing but cockroaches and squid around. Take the squid; remove the head from the body. Remove the guts from the main tube. Remove the inside frame. So these are the ink sacks that if you cut the wrong way can squirt. And then, with your fingers, you want to force out the beak, which you can't eat. Give it a rinse and you're ready to cook. The rule with squid is either a really quick sear and quick cook or you're going to braise it for about two hours for it to get tender again.
