Showing you how to prepare Zereshk Polow with Chicken. *You can use less saffron in your chicken and barberries if you like. Reason being: 1. I know how expensive saffron is. 2. You might not prefer your rice as colored as I do. :)
You can omit the ginger (but it really adds a nice subtle flavor)
You can omit the soy sauce, however increase your salt to 1 teaspoon.
You can substitute chicken broth for the wine. (I know wine isn't commonly used in Persian cooking, however it does add to the complex flavor of the chicken.)
If you've never tried adding these ingredients, maybe you might like it! So give them a try! :-)
Also, I don't use saffron water because I already have enough water to dilute the saffron while cooking. But if you prefer to use saffron water...you can use 3 tablespoons in the chicken and 1-2 tablespoon in the barberries. This will produce a lighter flavor but still gives your food a great color!

This recipe serves 2-4 people. You can double the recipe if you are cooking for more people. Just make sure you have a pot big enough to cook the chicken and rice in. :)
You can also finish the rice on the stove by putting the towel or wax paper on top (like I showed in the video), then, turn the heat to low and cook for 45-55 minutes (depending on how much tahdig you like). I finish my rice in the oven because it evenly distributes the heat.
