Betty's Caramel Bar Cookies -- Easter

Betty demonstrates how to make Caramel Bar Cookies for the Easter Table. These delicious cookies may be cut into squares or rectangles, depending on the number of servings desired.
Ingredients:
1 package yellow cake mix
½ cup vegetable oil
1 egg
11 ounces caramel melting bits (You may use unwrapped caramel squares.)
1/3 cup evaporated milk
1/3 cup butter
1 2/3 cups confectioner's sugar
1 cup chopped pecans
6 ounces semi-sweet chocolate chips
In a large bowl, combine dry cake mix, oil, and egg using a pastry blender. Spread evenly in bottom of a 13-inch by 9-inch by 2-inch baking dish. Bake at 350 degrees (F) for 15 to 20 minutes until golden brown. Remove from oven and set aside. Now, make the filling: In a small saucepan, combine caramel bits and evaporated milk. Heat over low heat until melted, stirring constantly. Add butter and stir until melted. Remove from heat. Stir in confectioner's sugar and pecans. Spread over warm crust. For frosting, sprinkle chocolate chips over top. Gently spread in a very thin layer over caramel filling. Let Caramel Bar Cookies cool to room temperature, then cover with plastic wrap and refrigerate until serving time. They may be served while slightly warm, or after they have been chilled. Cut into squares or rectangles, as desired. This is a bar cookie that is fancy enough to serve at a holiday meal! I hope you love it! --Betty ♥♥♥
