Betty demonstrates how to make a Gorgeous Lemonade Cheesecake. This cake is so quick and easy, but it has a delightful flavor.
Gorgeous Lemonade Cheesecake
1 package white cake mix (about 16.5 ounces)
1 cup sour cream
6 ounces frozen lemonade concentrate, thawed
3 ounces cream cheese, softened
3 eggs
1 additional cup sour cream (for frosting)
¼ cup white granulated sugar (for frosting)
mint leaves, for garnish (optional)
Prepare a 10-inch springform pan by buttering it on the bottom and around the inside. In a large bowl, mix cake mix, 1 cup sour cream, lemonade concentrate, cream cheese, and eggs together, using an electric mixer on medium speed. Pour batter into prepared pan and bake at 350 degrees (F) for about 40 minutes, or until a cake pick in center comes out clean. Place pan or cooling rack and let cool for 20 minutes. Remove cake from pan and let cool completely. To frost, mix together 1 cup sour cream and ¼ cup sugar and spread it on cooled cake. Garnish cake with fresh mint leaves, if desired.
