This really is a bloody delicious stew.
Ingredients
1 ½ cups pork blood
2 lbs pork butt or pork belly, cut into small chunks
3 garlic cloves
1 large onion
2 bay leaves
1 cup white vinegar
1 ½ cups water
2 tbsp fish sauce
Chili peppers to taste
Salt and pepper to taste
Oil for pan
Rice to serve
Steps
Heat a drizzle of oil in a deep pan. Add garlic and onion and saute for a few minutes. Add pork and allow to slightly brown.
Add vinegar, water, and bay leaf and let simmer for about 15 minutes on low heat.
Stir in the blood and keep stirring to prevent coagulated clumps. Add salt, pepper, and chili peppers. Simmer for another 10 minutes, until the stew has slightly thickened.
Serve with rice!
