Honey Soy Pork Tacos
Serves 2 Prep 10 mins (+ cooling time) Cooking 15 mins
1 cup (80g) finely shredded red cabbage
½ green apple, cored, cut into matchsticks
¼ red onion, thinly sliced
½ cup (125ml) apple cider vinegar
½ cup (110g) white sugar
1 tbs extra virgin olive oil
400g Coles Australian Pork Belly Roast Boneless, thinly sliced, halved crossways
150g pkt MAGGI Marketplace Honey Soy Stir Fry
4 soft white corn tortillas
Coriander sprigs, to serve
Lime wedges, to serve
1 Combine the cabbage, apple and onion in a heatproof bowl. Place the vinegar and sugar in a small saucepan over medium heat. Cook, stirring, until sugar dissolves. Bring to the boil. Pour over the cabbage mixture. Set aside to cool.
2 Heat the oil in a medium non-stick frying pan over high heat. Arrange the pork in a single layer over the base of the pan. Cook, turning, for 3-4 mins or until browned all over. Drain excess fat from the pan. Reduce heat to medium-low. Add the infusion paste and finishing sauce from the stir-fry packet. Cook, stirring, for 1-2 mins or until pork is well coated.
3 Meanwhile, heat a chargrill on high. Cook the tortillas, turning, for 1-2 mins or until lightly charred.
4 Drain the cabbage mixture. Top the tortillas with the pork mixture and the cabbage mixture. Serve with coriander sprigs and lime wedges.
