Chowhound video producer Olivia shares her favorite chicken soup recipe inspired by dishes she learned to cook while living in Spain. She and Ori are trying to be resourceful while staying safe in quarantine by using all the produce left in the refrigerator and pantry before it goes bad, because - waste not want not!

Olivia and Ori’s Chicken Soup (Sopa Casera)

Recipe:
6-8 servings

Ingredients
¼ cup olive oil
6-8 chicken drumsticks (or whatever chicken parts you have, preferably in the bone)
4 medium tomatoes
1 large yellow onion
2-3 cups of chicken stock
4 celery sticks
4 large carrots
3-4 large potatoes (we used red potatoes (our favorites) but yukon or russet are fine as well)
Salt to taste
Pepper to taste
Lemon (for extra lemony kick - not southwestern)

Instructions:

Prep: wash EVERYTHING well.
Rough chop the onion
Large dice the celery
Peel the carrots and large dice
Half the potatoes if small, quarter if larger (peel the skin if that’s your preference)
Large dice the tomatoes (make sure not to lose any of the juice!)
Heat the olive oil in a large pot on high heat
Cook the onions until soft and golden, stirring frequently
Add potatoes and cook for 5 minutes
Add carrots and celery and cook for 5 minutes
Add the drumsticks and cook until skin turns golden (making sure the outsides are cooked)
Add tomatoes, and cook for 15 minutes covered until it reaches a simmer
Add chicken stock or water, making sure the liquid covers everything in the pot
Cook covered on low for 20-30 minutes
Adjust seasoning with salt and pepper to your taste
Add a squeeze of lemon for a fresh, lemony kick!
