This is an all time favourite in my house around winter time. Extremely warming and tasty dish to make for the family. Traditionally Irish stew is made with lamb but i like to use beef.

RECIPE:

Ingredients:
1 Carrot large diced
5 Shallots halved
2 Celery Sticks
Glass Of Red Wine
3 Garlic Cloves Diced
3 sprigs of thyme
3 large Maris Piper Potatoes (large dice soaked in water)
500g Beef steak cutlets for stewing
50ml Worcester Sauce
1 litre of beef stock
Method:
1. Prep all vegetables & trim up the beef.
2. Seal off the beef in a pan with salt and pepper, add to slow cooker.
3. Sweat off vegetables in the same pan and same juices from the steak. Once they begin to colour, add in the thyme and red wine to deglaze the pan. Reduce the red wine fully to cook out all alcohol.
4. Add in the beef stock and reduce by half. Then add in the Worcester sauce.
5. Add potatoes from water to slow cooker and then add in everything else.
6. Cook on a low heat for 5 hours.
7. Enjoy!
