So here today I have a recipe for Kookoo Sabzi, which is an Iranian herb egg dish. It is very similar to a frittata (but waaaaay better) and is mostly served for the Iranian New Year (Nowruz). I can't tell you how happy I am whenever this is prepared! The taste of the savory herbs mixed with the tart barberries is a combination like no other! As an added bonus using mostly egg whites to lighten it up a bit, makes me want to prepare this dish year-round (which I do! lol).
There are a few other ingredients you can add to kookoo sabzi like chopped walnuts, peeled walnut halves or baking soda (which makes it fluffier). However, Ramin and I don't particularly care for the walnuts and Ramin's Mother doesn't care for the baking soda, so we make it without. lol But believe me it is soooo tasty!!! If you are a green veggie and herb lover this is for you!
