I like to season from on high and sprinkle at the same time. And what that does is help to disperse the salt a little bit more evenly because if you season really, really low, you're going to get little pockets of salt. You apply the same concept to the pepper mill. Again, if you season in one place you're going to get a pile of pepper. So what you want to do is just sort of throw the pepper. If you throw it, it spreads itself out. Always go one direction with your pepper mill and make sure that it's tightly screwed. If you unscrew it the grinder will come undone and that will give you uneven pepper.
