Generally you want to season your meat just before you cook it. If you let it sit with the salt on it the meat will start to cure. Salt brings out liquid. So what you're going to have is a less juicy piece of meat and when you go to sear that you're going to sort of boil it rather than actually make that nice caramelization, which tastes good.
