This is Miner's lettuce. You see it everywhere after the rainy season in California. You probably have it in your backyard. A way to identify it is to look for this kind of lily pad structure. It has a really high vitamin C content and the miner's, during the gold rush, used to eat it as a way to fight off scurvy. Miner's lettuce has a really nice sweet, citrusy flavor that you don't find in a lot of other greens. So what I like to do is use it as an accent in salads. You can throw it in whole with some other mixed spring greens and some pickled beets. You can use it just as the only green in your salad, which is also really delicious.
