TRANSCRIPT
Barbequing oysters is the easiest way to consume oysters. Opening them on the half shell is when they can be really resistant. That takes a lot more skill. You kind of find the point of leverage, you know, crack it open. If you don't know what you're doing you can slip, stab yourself. The barbequed oyster helps you right along because the heat expands the air inside and they pop themselves open. Now if you want them just lightly cooked you don't actually want to see them pop open. You just want to cut them warm, open them, slurp them down. If you want them thoroughly cooked, once they've popped open, they're done.
