Betty demonstrates how to make White Chocolate and Lime Nibbles. This treat is made from Rice Chex, coated with melted white chocolate and then covered by a mixture of confectioner’s sugar and dry lime Jello mix. They are scrumptious!
White Chocolate and Lime Nibbles
9 cups dry Rice Chex cereal (You may use Corn Chex, Wheat Chex, or any combination of Chex cereals.)
2 cups white chocolate chips
1 cup confectioner’s sugar (This is the same as powdered sugar or icing sugar.)
2 small boxes of dry sugar-free lime Jello mix
Pour cereal into large bowl and set aside. In another bowl, melt white chocolate chips, checking and stirring every 30 seconds for about 2 minutes, or until chips are melted. Gently stir melted white chocolate into cereal until all pieces are covered and set aside. Place confectioner’s sugar and dry Jello mix in a gallon-sized Zip-Lock plastic bag. Seal top and shake until confectioner’s sugar and dry coating mix are well-combined. Add chocolate-coated cereal to plastic bag. Seal and shake bag vigorously, until cereal is coated and all of coating mixture is used up. Place coated cereal on a large shallow baking pan to dry for 30 minutes to an hour. Store in airtight container until ready to serve. This will keep well for at least a week (if not eaten sooner!). Enjoy! --Betty :)
