Coffee Cake Scones
Serves: 6–8
Ingredients:
2 cups all-purpose flour
⅓ cup granulated sugar
1 tbsp baking powder
½ tsp salt
½ cup unsalted butter, cold and cubed
½ cup sour cream
1 egg
1 tsp vanilla extract
Cinnamon Swirl:
¼ cup brown sugar
1 tsp cinnamon
Streusel Topping:
2 tbsp flour
2 tbsp brown sugar
1 tbsp butter
Method:
Mix flour, sugar, baking powder, and salt. Cut in butter until crumbly.
Add sour cream, egg, and vanilla. Mix gently just until combined.
Fold in cinnamon swirl mixture lightly.
Shape into a round disk, cut into wedges.
Top with streusel and bake at 200°C (400°F) for 15–18 minutes until golden.
