APPLE FRITTERS WITH GINGER BEER BATTER
Serves 4 Prep 10 mins Cooking 15 mins

1 cup (150g) self-raising flour
½ tsp ground ginger
¼ tsp bicarbonate of soda
1 cup (250ml) chilled ginger beer
¹⁄³ cup (75g) caster sugar
1 tsp ground cinnamon
Vegetable oil, to shallow-fry
3 apples, cored, cut into 1cm-thick slices

1. Combine flour, ginger and bicarbonate of soda in a large bowl. Add ginger beer and whisk until a smooth batter forms.
2. Combine the sugar and cinnamon in a large shallow bowl.
3. Heat the oil in a large deep frying pan over medium-high heat.
4. Dip one-quarter of the apple slices in the batter to lightly coat. Carefully add to the hot oil in a single layer. Cook for 2 mins or until light golden. Turn and cook for 1 min or until crisp. Use a slotted spoon to transfer to a plate lined with paper towel. Add to sugar mixture and toss to lightly coat. Place on a serving plate. Repeat in 3 more batches with remaining apples and batter.

Serve with vanilla ice-cream and bought salted caramel sauce.
