Fried Bananas (banana emoji)
These sweet treats are the perfect addition to any dinner party or late night snack–they’re oh-so-crispy and not too sweet ;)
Ingredients (serves 4-6)
Batter
-3/4 cup rice flour
-½ cup all-purpose flour
-½ cup cornstarch
-½ cup cane sugar, plus more for sprinkling
-1½ tsp baking powder
-½ cup coconut milk
-¼-½ cup water
-½ cup grated coconut or rehydrated shredded coconut (optional)
-1 Tbsp black sesame seeds
-1 Tbsp white sesame seeds
-2 tsp ground cinnamon
Fried Bananas
-10-15 Thai bananas
-2 cups vegetable oil
Preparation
In a medium bowl, whisk together the rice flour, all-purpose flour, cornstarch, sugar, baking powder, coconut milk, water, black and white sesame seeds, and grated coconut, if using. Let rest for 30 minutes.
Peel the bananas and cut in half lengthwise.
Heat the oil in a medium pot over medium heat until the temperature reaches 350°F (180°C).
Working in batches to avoid overcrowding, the pot, dip the banana halves into the batter, then drop straight into the hot oil. Fry for 2-3 minutes, or until golden brown and crispy.
Sprinkle some sugar on top for an extra crispy crunch.
