Bias cut is one of those cuts you'll see most often with stir fry's. The idea is you cut something on a bias or diagonal and then the cooking time decreases. Most commonly you'll see it with carrots and you can either cut at an extreme angle, like this, and the wide angle will shorten cooking time. Or you can cut it on a shallow angle or a short angle and that will increase the cooking time a little bit. All you do is you take your vegetable and you just cut on the diagonal. I'm going to cut about this diagonal so that I get a nice long elongation. Get rid of that end piece and chop off your top piece, which I've already done. Then you just go all the way up the vegetable. As you get toward the top, because the diameter increases a little bit, you might want to cut them just a little bit thinner. But that's about it.
