Dice is the most common cut you're going to come across, by far, and actually there are four different kinds. There's the brunoise, which is an eighth of an inch squared, really small. You got the small dice at a quarter inch square. Then you've got the medium at a half of an inch squared. And the large dice is significantly larger at three quarters of an inch squared. So let me show you how you do it. You're going to take the vegetable and square it off. You actually just want to get it even. Put it on its side. And then we're going to do medium dice so that's a half inch plank that you're going to cut into. Stack them on top of each other and cut them one more time. Turn them and you've got a dice.
